Ingredients

¼ cup rice bran oil, divided
2 large whole white fish, butterflied, rinsed & dried
1 tbsp garlic powder
SIDS SALT & PEPPER to taste
8 cloves garlic, minced
½ cup fresh lime juice
2 lemons, thin sliced
2 tomatoes, thin sliced
1 onion, thin sliced
1 orange bell pepper, chopped

Directions

Preheat oven to 200oC. Grease a baking dish with 1 teaspoon oil.
Rub remaining oil over the fish fillets and place into the baking dish. Season fish with garlic powder, SIDS SALT & PEPPER then top with minced garlic. Drizzle lime juice over the fish. Arrange lemon slices, tomato slices, onion slices and bell pepper slices atop the fish. Cover baking dish tightly with aluminum foil.
Bake in oven until fish flakes easily with a fork, 30-40 minutes.
