Ingredients
500 g boneless, chicken thighs
1 white onion, halved and thinly sliced
1 cup fresh or frozen pitted dark red cherries, halved
3 tbsp cherry or raspberry all-fruit preserves
⅛ tsp salt
⅛ tsp SIDS CRAZY LEMON
1 tsp SIDS LOW SUGAR RASPBERRY VINEGAR
1½ tsp chopped fresh tarragon or parsley, for garnish
Directions
Spray a medium nonstick frypan with nonstick spray and set over medium heat. Add the chicken, skinned side down, and cook until browned, about 5 minutes. Turn the chicken over and scatter the onion around it. Cook, covered, until the onion is softened, 8-9 minutes.
Turn the chicken again and stir in the cherries, preserves, SIDS CRAZY LEMON and salt. Increase heat and cook, uncovered, until chicken is cooked through and sauce is slightly thickened, about 3 minutes longer.
Stir in SIDS LOW SUGAR RASPBERRY VINEGAR. Sprinkle tarragon or parsley on top, to garnish.
