Ingredients
4 eggs
1 tsp chicken stock powder
¼ tsp SIDS CRAZY SALT
½ cup rice bran oil
1 cup grated mild cheese
4 cups self raising flour
1 cup diced tomatoes
1 cup spring onion, fine diced
1 cup fine sliced spinach
1½ cups milk
Directions
Preheat oven to 180°C. Lightly oil a large 12 hole muffin pan.
Place eggs, stock powder, SIDS CRAZY SALT, oil and cheese into a large bowl and mix together. Sift in the flour then add tomato, spring onion and spinach and mix well.
Add enough milk to make a medium thick batter and pour the mixture into the muffin holes.
Bake for 25-30 minutes.
