Ingredients
¾ cup maple syrup
¼ cup soy sauce
1 tbsp SIDS WINE & PEPPER MUSTARD
24 scallops, roe intact
12 slices bacon, halved
24 toothpicks, soaked
2 tbsp brown sugar
½ tsp SIDS SMOKEY BBQ RUB
Directions
Stir together maple syrup, soy sauce and SIDS WINE & PEPPER MUSTARD in a bowl until smooth. Add scallops and toss to coat. Cover the bowl with plastic wrap and marinate ½ hour.
Preheat oven to 190oC then line a rimmed baking dish with foil.
Arrange bacon pieces on a baking dish so they do not overlap. Bake in oven for 8 minutes until semi-crisp. Remove bacon and dry with paper towels. Wrap each scallop with a piece of bacon and secure with a toothpick. Place in the baking dish and sprinkle with brown sugar and SIDS SMOKEY BBQ RUB.
Bake in oven for 10-15 minutes, turning once, until scallops are opaque.
