Ingredients

3 cups chicken stock
6 cloves garlic, chopped
6 shallots, sliced
2 stalks lemongrass, cut 2 cm & bruised
½ tsp SIDS CRAZY LEMON
2 cm galangal root, thin sliced
1½ large red chillies, deseeded & chopped
4 Kaffir lime leaves
2 cups fine rice noodles, pre-soaked
200 g small button mushrooms
3 tbsp fish sauce
24 scallops
Juice of 1 lime
¼ cup coriander, chopped
1 lime, quartered

Directions

Heat chicken stock then add garlic, shallots, lemongrass, SIDS CRAZY LEMON, galangal, chilli and lime leaves. Simmer for 5 minutes then add noodles, mushrooms and fish sauce. When mushrooms are cooked, increase heat and add scallops. Bring back to the boil then immediately turn off the heat. Squeeze in lime juice and stir in coriander.
Ladle into bowls, ensure the scallops are evenly distributed (to avoid fights) then serve with lime wedges.
