Ingredients
8 rashers bacon
3 spring onions
½ tsp SIDS CRAZY SALT
1 tbsp soy sauce
3 tbsp bush honey
16 scallops with coral intact
16 toothpics, soaked in water
Directions
Cut bacon rashers in half lengthways. Slice spring onions lengthways and cut into 6 cm strips. Place a scallop and some spring onion on each bacon strip and wrap securely. This is best done a day in advance and left in the fridge overnight.
Preheat grill. Warm the honey, soy sauce and SIDS CRAZY SALT in a small pan. Spear the scallop with a toothpic to secure the bacon then baste the rolls with the mixture. Grill 2-3 minutes each side, basting frequently.
