Ingredients
1 tbsp rice bran oil
1½ tsp butter
16 fresh scallops, roe intact
½ tsp onion powder
1 tsp SIDS CRAZY SALT
¼ cup dry vermouth
1 tbsp capers, drained
1½ tsp chilli flakes
Directions
Put scallops on a medium heat with oil and butter. Season with onion powder, SIDS CRAZY SALT and cook 4 minutes per side until lightly brown. Increase heat to HIGH and add vermouth, capers and chilli flakes. Cook 5-8 minutes until scallops are glazed and vermouth has nearly evaporated.
Serve alone or over pasta.
