Ingredients
16 large prawns, peeled & tailed
24 fresh scallops, roe intact
1 large mango, cut in chunks
50 g butter
DRESSING:--
juice of ½ pink grapefruit
1 lime, fine grated rind & juice
1 tsp bush honey
1 tbsp SIDS LOW SUGAR RASPBERRY VINEGAR
1 tsp SIDS CRAZY LEMON
skewers, soaked
Directions
Make the citrus dressing by whisking together all the ingredients, including SIDS LOW SUGAR RASPBERRY VINEGAR and SIDS CRAZY LEMON in a small bowl.
Poach the prawns in a pan of simmering water for 2 minutes until they turn pink then drain well. Put the scallops, prawns and mango into a bowl and pour over 3 tbsp of the dressing. Mix well to coat then thread them alternately on to 8 skewers.
Heat the butter in a large frypan then add skewers and fry, turning and basting, for about 5-7 minutes until golden brown.
Serve on plates and pour over remaining dressing.
