Ingredients
1 tsp butter
2 shallots, chopped
1 tsp green curry paste
½ tsp SIDS CRAZY LEMON
1 tbsp fine chopped lemongrass
200 ml coconut cream
300 g scallops
juice of 1 small lemon
1 cup cooked rice
2 tbsp chopped coriander
1 lime, sliced to serve
Directions
Sauté shallots in butter until soft. Add curry paste, SIDS CRAZY LEMON and lemongrass then cook for 30 seconds. Add coconut cream and stir until combined then bring to the boil. Add scallops and lemon juice then simmer 3-5 minutes until cooked.
Serve on a scallop ½ shell with cooked rice and garnish with coriander and lime slices.
