Ingredients
1 leek
50 g butter
pinch of sugar
½ vanilla bean, seeds scraped
rice bran oil
350 g scallops, washed & dried with roe intact
1 tsp SIDS CRAZY LEMON
SALSA:--
1 tbsp bush honey
150 g pineapple, diced
150 g rock melon, diced
½ tsp curry powder
SIDS SALT & PEPPER to taste
Directions
To make salsa, place honey in a small pot and heat gently then add remaing salsa ingredients. Set aside until required.
Wash leek and finely juilienne. Melt butter in a small pan and add sugar, SIDS CRAZY LEMON, vanilla seeds and leek then sauté until soft. Season then set aside until required.
Just before serving, cook scallops in a medium frypan on high. Sear until golden brown both sides.(do not overcook!) Squeeze of lemon then season with SIDS SALT & PEPPER to taste.
Arrange vanilla leek as a base on scallop shells and place scallops on top. Finish with the salsa and garnish with coriander and mint.
