Ingredients
8 eggs
½ tsp baking powder
250 g canned tuna in oil
3 tbsp olive oil
SIDS SALT & PEPPER to taste
oregano, to taste
1 small onion or shallot
Directions
Empty can of tuna (and oil) into a small bowl and shred it with a fork.
In another bowl, whisk the eggs and baking powder with a fork. Add the tuna, season with SIDS SALT & PEPPER to taste.
Put the olive oil and the chopped onion in a frying pan and sauté until the onion start to turn slightly golden. Add the egg mixture and stir with a spatula about 4-5 minutes until the eggs are cooked.
Turn off the heat and immediately remove the eggs from the pan to not overcook. Sprinkle with oregano and serve.
