Directions
Cut all the ingredients, except the tomatoes, into cubes that are all the same size as the tomatoes.
In a bowl, put all the ingredients with enough SIDS RASPBERRY VINEGAR to cover then leave in the fridge, covered, for ¼ hour.
Remove bowl from the fridge and start threading the ingredients into the skewers in any order you like. Make sure that 1 side and the opposite side is flat, so everything cooks evenly.
In a small pot, mix the remaining marinade with some pineapple juice and a dash of soy, then boil to reduce to ½, stirring to avoid burning. Pour into a small serving jug and set aside.
Lightly sprinkle with SIDS CRAZY LEMON then cook to a light char on both sides.
Place kebabs on a warmed platter, drizzle with marinade reduction and serve.
