Ingredients

1 tsp sesame oil
1 tsp rice bran oil
800 g scallops, with roe
¼ cup mirin
1 tsp SIDS CRAZY LEMON
1 tsp lemon juice
4 tbsp orange juice
2 tbsp GF soy sauce
½ tsp garlic, minced
¼ tsp fresh ginger, grated
¼ tsp cayenne pepper
½ tsp cornflour

Directions

Pat the scallops dry so that you'll get a nice crust. Sprinkle with SIDS CRAZY LEMON.
Heat a pan or skillet over high heat and add sesame and peanut oils. Add scallops gently to the pan and cook for 2 minutes without turning. Turn them gently and then immediately reduce the heat to medium. Cook for 1 more minute until the scallops are done. Remove from pan.
In the pan you just used, add the sauce ingredients (mirin, orange juice, lemon juice, soy sauce, garlic ginger and cayenne pepper) and bring up to a boil. Reduce heat immediately and simmer gently for 3-4 minutes.
While the sauce is cooking, combine the cornflour with 1 teaspoon of water. Stir mixture into sauce then add the scallops and toss with sauce until covered.
Remove from heat and plate and serve immediately.
