Ingredients

1 kg sea scallops, roe intact
2 tbsp butter
HERB BUTTER:--
½ tsp fresh oregano
½ tsp fresh parsley
½ tsp fresh thyme
½ tsp fresh sage
½ tsp fresh marjoram
1 pinch cayenne pepper
1 tsp fresh garlic, minced
1 tsp SIDS SALT & PEPPER
½ cup olive oil

Directions

Chop up the fresh herbs and add a pinch of cayenne pepper, minced garlic and a few shakes of SIDS SALT & PEPPER. Mix together in small bowl.
To make the Herb Butter, place herb mixture and approximately ½ cup olive oil in a bottle and shake well.
Thread scallops onto a soaked bamboo stick. Sauté scallops in butter, (don't shake pan as this will allow the scallops to caramelize) 2-3 minutes. Flip scallops over and sear other side, 1-2 minutes. Remove scallop skewers from pan and stir in 2 tablespoons Herb Butter over low heat. Place skewers on a warmed serving plate and drizzle with the Herb Butter.
