Ingredients

BEEF:--
500 g eye fillet, sliced thumb sized
½ tsp SIDS CRAZY SALT
2 tbsp cracked black pepper
1 green chilli, cut in thin strips
2 tbsp soy sauce
2 tbsp fish sauce
2 tbsp rice bran oil
¼ cup Thai basil, torn. Leave out if unavailable
2 cloves garlic, minced
DRESSING:--
¼ cup fresh lime juice
1½ tbsp fish sauce
2 tsp sugar
½ tsp cracked black pepper
1 green chilli, cut in thin strips
2 tbsp warm water
COOK:--
2 cups watercress sprigs
1 head Cos lettuce, chunks
2 red onions, thin sliced & soaked in iced water
rice bran oil for shallow frying

Directions

BEEF: Place SIDS CRAZY SALT and all ingredients in a bowl and marinate for at least 1 hour.
DRESSING: Whisk all the ingredients together until the sugar dissolves then set aside.
COOK: Toss the watercress, lettuce and onion together then scatter on a serving platter.
In a very hot wok, heat a little oil then stirfry the beef for less than 2 minutes.(this is to sear the meat very quickly as it must be rare and juicy)
Spoon the beef over the salad base and pour the dressing over everything.
