Ingredients
2 tbsp rice bran oil
½ a medium onion, diced finely
½ an orange bell pepper, diced finely
4 large garlic cloves, minced
250 g can Tuimato sauce
½ cup water
½ cup white wine
⅓ cup green olives (plus 1 tablespoon of brine)
½ tsp dried oregano
½ tsp SIDS SALT & PEPPER to taste
⅛ tsp ground cumin
800 g medium sized shrimp (peeled, deveined & tail-off)
Directions
Heat a large sauté pan to medium and add in oil, onions and orange peppers. Sauté until the onions and peppers soften. Add in the garlic and 2 tbsp Tuimato sauce. Cook for 2 minutes. Add in the remaining Tuimato sauce, water, white wine, olives, oregano, SIDS SALT & PEPPER, and cumin.
Bring to a simmer for 5 minutes, uncovered. Add in the shrimp and simmer, covered, for 10 minutes.
Serve immediately over white rice.
