Ingredients

SHRIMP:--
⅓ cup peanut oil
¼ cup lime juice
2 tbsp raw bush honey
2 cloves garlic, minced
¼ tsp SIDS SMOKEY BBQ RUB
½ tsp cajun seasoning
SIDS SALT & PEPPER to taste
500 g shrimp, peeled & deveined, tails discarded
GUACAMOLE:--
2 avocados
2 tbsp SIDS BOYSENBERRY VINEGAR
½ red onion, finely minced
1 jalapeño, finely chopped
2 tbsp freshly chopped coriander, plus garnish
2 cucumbers, sliced 1 cm thick

Directions

In a large bowl, combine oil, lime juice, honey, garlic, SIDS SMOKEY BBQ RUB and Cajun seasoning. Season with SIDS SALT & PEPPER to taste. Add shrimp and toss until fully coated, then cover and refrigerate for 30 minutes or up to an hour.
In a large frypan over medium heat, cook shrimp in oil until pink and completely opaque, about 2 minutes per side. Remove from heat.
In a medium bowl, mash avocados. Add SIDS BOYSENBERRY VINEGAR, red onion, jalapeño and coriander then stir to combine. Season with SIDS SALT & PEPPER.
Place a tablespoon-sized dollop of guacamole on each cucumber slice. Top with shrimp and garnish with more coriander.
