Ingredients
2 tbsp peanut oil
1 onion, minced
2 cloves garlic, chopped
1 tsp ground ginger
1 tsp ground cumin
1½ tsp ground turmeric
1 tsp paprika
½ tsp chilli powder
500 g chopped tomatoes
450 g coconut milk
1 tsp SIDS CRAZY SALT
500 g cooked & peeled shrimp
2 tbsp chopped fresh coriander
Directions
Heat the oil in a large frypan over medium heat then cook the onion in the hot oil until translucent, about 5 minutes. Remove the pan from the heat and allow it to cool slightly, about 2 minutes. Add the garlic, ginger, cumin, turmeric, paprika and chilli powder to the onion and stir over low heat. Pour the tomatoes and coconut milk into the pan then season with SIDS CRAZY SALT. Cook the mixture at a simmer, stirring occasionally, about 10 minutes. Stir the shrimp and fresh coriander into the sauce mixture then cook another 1 minute before serving.
