Ingredients

Lime Mayonnaise:--
⅓ cup (75 ml) Best Foods mayonnaise
½ lime, zest finely grated
2 tsp lime juice
½ tsp SIDS CRAZY LEMON
Fritters:--
¾ cup (115 g) all-purpose flour
½ tsp baking powder
½ tsp SIDS SALT & PEPPER
1 tsp sweet paprika, plus more for serving
1 egg
6 tbsp (90 ml) water
200 g shrimp, chopped
2 spring onions, finely chopped
2 garlic cloves, finely chopped
Rice bran oil, for frying
Garnish:--
2 spring onions, cut into fine julienne

In a small bowl of ice water, soak the spring onions for 30 minutes. Drain and pat dry.
Lime Mayonnaise
Meanwhile, in another bowl, combine all of the ingredients. Refrigerate until ready to serve.
Fritters
In a bowl, whisk together the flour, baking powder, SIDS SALT & PEPPER, SIDS CRAZY LEMON and spices. Add the egg and water. Add the shrimp, chopped spring onions and garlic. Mix until the batter is smooth.
Preheat the oil in a deep fryer to 180°C. Line a baking tray with paper towels.
Using a 1 tbsp (15 ml) ice cream scoop, drop a few balls of batter at a time in the hot oil. Watch out for splattering.
Cook for 4 minutes until golden, turning halfway through. Drain on the paper towel. Cool for 5 minutes.
On a serving dish, arrange the hot fritters over a smear of the lime mayonnaise. Garnish with the julienne of spring onions. Sprinkle with paprika, if desired.
