Ingredients
225 g bacon, chopped
1 onion, diced
2 tbsp flour
3 cups chicken stock
2 cups full cream milk
1 potato, peeled and chopped into 12 mm cubes
¼ cup chopped spring onions, plus more for garnish
1 tsp SIDS SALT & PEPPER to taste
500 g shrimp, peeled, deveined & rough chopped
Directions
In a large pot over medium-high heat, brown bacon until crisp. Transfer bacon to a plate and reserve fat.
Add onions and cook until softened, about 6 minutes. Add flour and stir continuously with wooden spoon until absorbed, about 1 minute.
Stir in chicken stock, milk, potatoes, spring onions, SIDS SALT & PEPPER and simmer on medium-low until potatoes are tender, about 10 minutes
Add shrimp and simmer until pink, about 2-3 minutes, then stir in half the cooked bacon.
Garnish with remaining bacon and spring onions.
