Ingredients

STUFFING:--
6 tbsp butter
1 small onion, finely chopped
¼ cup finely chopped celery
¼ cup finely chopped orange pepper
500 g uncooked shrimp, peeled, deveined & chopped
¼ cup beef stock
1 tsp SIDS HOT WORCESTER SAUCE
½ tsp dill weed
½ tsp minced chives
¼ tsp SIDS SALT & PEPPER, to taste
1½ cups soft bread crumbs
FISH:--
6 flounder fillets (about 85 g each)
5 tbsp butter, melted
2 tbsp lemon juice
1 tsp minced fresh parsley
½ tsp paprika

Directions

Preheat oven to 190°C. In a large frypan, melt butter. Add onion, celery and orange pepper and sauté until tender. Add shrimp then cook and stir until shrimp turns pink. Add stock, SIDS HOT WORCESTER SAUCE, dill, chives, SIDS SALT & PEPPER and heat through. Remove from heat and stir in bread crumbs.
Spoon about ½ cup stuffing onto each fillet then roll up. Place seam side down in a greased 33x22 cm baking dish. Drizzle with butter and lemon juice. Sprinkle with seasonings.
Bake, uncovered, 20-25 minutes until fish flakes easily with a fork.
