Ingredients

1½ cups flour
¾ cup cornflour
1½ tbsp baking powder
1½ cups cold soda water
1 tsp SIDS SALT & PEPPER
Rice bran oil, for frying
500 g shrimp, deveined & shells removed

Directions

Set a pot of oil (8 cm deep) on medium high until it reaches 190°C.
Whisk the flour, cornflour, baking powder and SIDS SALT & PEPPER in a bowl together.
Dredge the shrimp lightly in the mixture and set aside.
Add in the soda and whisk, then dip the shrimp in the batter before carefully frying in the oil for 2-3 minutes until golden brown.
