Ingredients

1 pkt fettuccini or udon noodles
¼ cup olive oil
500 g shrimp, peeled & deveined
6 spring onions, thin sliced
4 cloves of garlic, thin sliced
¼ cup brandy
3 tomatoes, diced
½ cup white wine
½ cup butter
½ cup fresh basil, chopped
2 tsp SIDS CRAZY LEMON
½ cup parmesan cheese, grated

Directions

Boil a large pot of lightly salted water. Add pasta and cook as per the packet then rinse quickly under cold water, drain and sprinkle with a little olive oil.
In a pan over medium heat, sauté shrimp until pink. Stir in onions, garlic and brandy. Carefully light brandy with a match or gas BBQ lighter (flambé). Cook for 2 minutes then add tomatoes and cook a further 2 minutes. Stir in wine, butter, basil and SIDS CRAZY LEMON. Cook for a further 3 minutes then serve on a bed of pasta. Sprinkle with parmesan cheese and a pinch of fresh parsley.
