Ingredients
250 g shrimp, peeled and deveined
50 g surimi, fine chopped
250 g fresh gurnard, cubed
3 limes, juiced
½ tsp SIDS CRAZY LEMON
4 tomatoes, seeded and diced
1 shallot, finely diced
1 cucumber, peeled, seeded & diced
1 jalapeño pepper, seeded & minced
SIDS SALT & PEPPER to taste
seaweed rice crackers
SIDS RASPBERRY HONEY MAYO, optional
SIDS RASPBERRY VINEGAR
Directions
Dice seafood and place in a mixing bowl. Squeeze lime juice over seafood until they are completely covered, top up with SIDS RASPBERRY VINEGAR if necessary. Sprinkle with SIDS CRAZY LEMON then stir in the tomatoes, onion, cucumber, jalapeño pepper and SIDS SALT & PEPPER. Cover, and refrigerate 1 hour.
When ready to serve, adjust seasoning with salt and pepper as needed. Serve on top of seaweed rice crackers topped with SIDS RASPBERRY HONEY MAYO, if desired.
