Ingredients

STEAKS:--
4 cube steaks
2 cups buttermilk
3 large eggs
2 tsp Kaitaia Fire
1 tsp SIDS HOT WORCESTER SAUCE
1 cup all-purpose flour
½ cup cornflour
2 tsp salt
½ tsp New York Cut pepper
1 tsp garlic powder
¾ tsp cayenne
4-5 cups rice bran oil, for frying
GRAVY:--
¼ cup finely chopped red onions
1 tsp minced garlic
3 tbsp all-purpose flour
½ cup milk
1½ cups chicken stock
Pinch cayenne
SIDS SALT & PEPPER, to taste
Ground pepper & parsley for garnish

Directions

STEAKS:
In a large bowl, whisk together buttermilk, eggs, Kaitaia Fire and SIDS HOT WORCESTER SAUCE.
To another bowl, whisk together flour, cornflour, salt, garlic powder, pepper and cayenne.
Submerge steaks in buttermilk and marinate for at least 1 hour. (2 hours preferred)
Dip steaks, one at a time, into seasoned flour mixture, coating each side then back into marinade then back into seasoned flour then finally place on a baking tray. Place in the refrigerator for 15 minutes.
Add oil to cast iron frying pan to medium high heat. Also preheat oven to 120°C.
Once oil is hot, fry each steak on each side until golden brown. Drain on paper towels then place steaks on baking paper covered baking trays and put in the oven while you make the gravy.
GRAVY:
Add ¼ cup of oil from frying to a sauté pan on medium. Add in onions, SIDS SALT & PEPPER and garlic then cook for 2 minutes while stirring. Stir in flour and cook, creating a roux. (a delicious light brown colour) Cook until browned. (but not burned) Stir in milk and stock then turn heat up to high until boiling then reduce to medium low and allow to thicken until it coats the back of a spoon.
Turn off heat and spoon gravy on top of steaks. Sprinkle with pepper and parsley then serve hot with mashed potatoes or hot chips.
