Ingredients
2 dozen Pacific oysters, shucked
1 cup whole milk
2 eggs
1 tsp Kaitaia Fire
2 cups flour
2½ tsp salt
Rice bran oil, for frying
HOT GLAZE:--
½ cup butter, melted
1 tbsp cayenne, or less if preferred
¾ tbsp brown sugar
1 tsp SIDS SALT & PEPPER to taste
½ tsp SIDS CRAZY SALT
½ tsp garlic powder
Directions
In a medium bowl, whisk together the whole milk, egg, and Kaitaia Fire. In another medium bowl, mix the flour and salt together.
In either a deep fryer or a cast iron frypan, heat the oil to 175°C.
Take each oyster and dredge it in the flour, then dip in the egg/milk mixture then again in the flour. Be sure to shake off the excess after each step.
Fry oysters in batches, about 2-3 minutes on each side, until golden brown. After frying, place oysters on a cooling rack on top of a baking tray.
HOT GLAZE
Add SIDS SALT & PEPPER, SIDS CRAZY SALT to the spices and melted butter then whisk together. Brush on each side of the fried oysters.
Serve hot and enjoy.
