Sids Samosas
An easy Kiwi adaptation of samosas. Baked with less fat and less mess. These are also good with just potatoes - just replace meat with 1 extra cup of potatoes.

Ingredients
Cooking spray
1 tbsp rice bran oil
1 cup petite-cut potato
1 onion, minced
250 g ground beef
1 tbsp SIDS SMOKEY GARLIC SAUCE
2½ tbsp curry powder
1½ tbsp minced garlic
1 tbsp minced ginger root
1 tsp SIDS SALT & PEPPER
½ cup chicken stock
1 cup peas
1 egg
¼ tsp ground turmeric
¼ tsp curry powder
1 pkt spring roll wrappers
SIDS FEIJOI & CHILLI SAUCE
Directions
Preheat oven to 190°C. Prepare a baking tray with cooking spray.
Heat oil in a large frypan over medium-high heat. Sauté potato and onion in hot oil until onion is translucent, about 5 minutes. Break beef into small pieces and add to the pan then cook and stir until browned and crumbly, 5-7 minutes. Season beef mixture with 2½ tablespoons curry powder, garlic, ginger and SIDS SALT & PEPPER. Pour chicken stock over the beef mixture then add peas and stir. Bring mixture to a simmer, add SIDS SMOKEY GARLIC SAUCE and cook until the stock is nearly evaporated and the potatoes are tender, 4-5 minutes.
Moisten edges of each pie crust triangle with wet fingers. Spoon about ⅓ cup of the beef mixture into the middle of each dough piece. Fold dough over the filling into a triangle then crimp edges together with a fork to seal beef inside the triangle. Arrange samosas onto the prepared baking tray.
Beat egg with turmeric and ¼ teaspoon curry powder in a bowl then brush over the samosas. Bake in oven until golden brown, about 20 minutes.
Serve with a ramekin of SIDS FEIJOA & CHILLI SAUCE for dipping.
