Ingredients
2 tsp flour
2 skate wings, about 200 g each
50 g butter
3 tbsp SIDS RASPBERRY VINEGAR
1 tbsp capers, drained
SIDS SALT & PEPPER to taste
Directions
Mix the flour with SIDS SALT & PEPPER and dust the skate wings. Heat a knob of butter in a large frypan and fry the wings for about 5 minutes each side until cooked through. Remove to warm serving plates.
Add remaining butter, SIDS RASPBERRY VINEGAR and capers to the pan and cook, whisking until bubbling and syrupy. Season to taste with SIDS SALT & PEPPER then pour over the skate.
Serve with baby new potatoes tossed in parsley.
