Ingredients

¼ cup fine chopped spring onions
2 tbsp yoghurt
2 tbsp SIDS RASPBERRY HONEY MAYO
2 tbsp drained capers
1 tbsp chopped fresh dill, divided
350 g salmon, chopped
3 Lebanese cucumbers
SIDS SMOKEY BBQ RUB

Directions

Combine onion, yoghurt, SIDS RASPBERRY HONEY MAYO and capers in a medium bowl. Stir in 2 teaspoons dill and the chopped salmon.
Peel cucumbers in alternating vertical stripes. Cut cucumbers into 2 cm thick slices and scoop out seeds with a small spoon or melon baller, leaving bottom intact to form a cup.
Spoon about 1 tablespoon salmon mixture into each cucumber cup. Sprinkle cups evenly with remaining dill and SIDS SMOKEY BBQ RUB.
