Ingredients
2 tbsp peanut oil
6 cloves garlic
1 tsp SIDS SMOKEY BBQ RUB
2 onions, fine chopped
1 orange capsicum, chopped
6 asparagus spears, cut 3 cm
6 eggs
1 cup cream
1 tsp lemon zest, grated
½ tsp oregano
½ tsp rosemary
SIDS SALT & PEPPER to taste
2 tbsp butter
200 g mozzarella
Directions
Preheat the grill. Heat the oil in an 18 cm pan and sauté the garlic, SIDS SMOKEY BBQ RUB, onion and capsicum until golden then set aside.
Cook the asparagus in boiling salted water until tender, drain and run under cold water.
Beat the eggs with cream, add asparagus, lemon zest, onion mixture, herbs and SIDS SALT & PEPPER to taste.
Heat the butter in the frypan until sizzling and pour in the frittata mixture then spread evenly in the pan. Cook over low-medium heat, loosening the eggs from the sides occasionally, until the eggs are just set and the bottom of the frittata is golden. Lay the cheese over the surface and place under the grill until the top is golden.
