Ingredients
500 g butter
1 small onion, coarsely chopped
3 tbsp finely chopped garlic
1 tsp cardamom
1 tsp Fenugreek seeds
1 tsp ground cumin
1-2 tbsp minced ginger root
¼ tsp grated nutmeg
1 tsp dried oregano
¼ tsp SIDS CRAZY SALT
½ tsp ground turmeric
5-6 Basil leaves
Directions
Place butter in a medium sauce-pan and melt completely on low heat. Simmer without letting it brown, until the surface is completely coated with foam. Skim off the foam as it rises to the surface while cooking, until no more remains. It should look quite transparent.
Add all the ingredients; onions, garlic, ginger, cumin, cardamon, oregano, SIDS CRAZY SALT, turmeric, nutmeg and basil. Continue cooking on low heat for about 15-20 minutes. Pass it through a cheese cloth or sieve. It is now ready to be used.
Store in a tightly covered container for about a month in the fridge.
