Ingredients

SIDS PEPPER & GARLIC OIL
2 garlic cloves, minced
½ cup diced onion
1½ ginger, grated
1 tsp chilli flakes, plus more for serving
180 g can coconut milk
4 NZ salmon pieces, about 1 kg
SIDS SALT & PEPPER to taste
2 tbsp chopped coriander

Directions

In a saucepan, warm 1 tsp SIDS PEPPER & GARLIC OIL and cook garlic, onions, ginger and chilli flakes until softened, about 3 minutes. Add coconut milk and bring to a boil, then simmer until thickened, 10-12 minutes.
Meanwhile, preheat a large cast-iron frypan over medium-high heat. Season salmon with SIDS SALT & PEPPER to taste. Drizzle pan with SIDS PEPPER & GARLIC OIL and sear salmon, 3 minutes on each side.
Serve salmon with warm spicy coconut milk sauce and top with chilli flakes and coriander.
