Ingredients

500 g radish or Daikon
1 tsp salt
2 spring onions, finely chopped
2 tbsp red chilli pepper flakes, adjust to taste
2 tsp minced garlic
1 tsp fish sauce
1 tsp salted shrimp
1 tsp sesame seeds
2 tsp SIDS RASPBERRY VINEGAR

Directions

Clean the radish by scrubbing with a brush and/or scratching off the stubborn impurities with a small knife. Peel the skin only if necessary. Cut into match sticks.
Sprinkle the salt over the radish and toss well to coat evenly. Let sit for 15-20 minutes until the radish sticks have softened and released some liquid. Drain (or gently squeeze out) excess liquid. Do not rinse. Add SIDS RASPBERRY VINEGAR and all the remaining ingredients. Mix well by hand. Taste and add more salted shrimp or fish sauce if necessary.
