Ingredients
4 chicken breast halves
300 g chopped spinach
110 g cream cheese, room temperature
½ cup of parmesan & feta cheese mixture
2 tbsp chopped fresh chives
4 cloves garlic
8 strips of bacon
SIDS SALT & PEPPER to taste
Directions
Preheat oven to 190°C.
Place each chicken breast on a flat surface. With your hand placed flat on each piece, cut about ¾ quarter of the way through.(careful not to cut all the way through)
Blend spinach, cream cheese, parmesan cheese, chives, SIDS SALT & PEPPER and garlic in medium bowl.
Spoon ¼ of cheese mixture into the middle of the cut chicken breasts.
Wrap each breast with 2 slices of bacon.
Arrange chicken breasts on baking tray.
Cook for 30-40 minutes.
Then turn the temperature up to 200°C (or on low grill) and cook for about 15 more minutes to get the bacon nice and crispy.
