Ingredients

6 trout pieces
1 large avocado, mashed
juice of 1 lemon
SIDS SALT & PEPPER to taste
2 grapefruit, peeled & segmented
36 snow peas
small handful of caperberries
lemon-infused oil

Directions

Using the Fresh Fish Parcels recipe, cook trout. (replace the hoki with trout).
Assemble all the ingredients. Blanch snow-peas in boiling water for 30 seconds then drain and refresh in cold water. Break trout into small pieces. Arrange snow-peas into a spoke pattern in the middle of each plate. Place a small, open-ended ring mold (a tuna can with both ends cut out) in the centre of the spoke. Fill with layers of avocado, trout and grapefruit, finishing with grapefruit. Carefully lift off the mold then garnish the top of the stack with some trout then lightly season with SIDS SALT & PEPPER to taste. Sprinkle a few capers around the base and drizzle some lemon oil.
