Ingredients
2 tbsp rice bran oil
8 pork sausages
1 onion, quartered & sliced
2 garlic cloves, chopped
1 tsp grated ginger root
½ tsp minced red chilli
½ cup chicken stock
½ cup white wine
Zest and juice of 1 lemon
1 tbsp brown sugar
1 tsp SIDS SALT & PEPPER
½ tsp ground cinnamon
½ tsp ground allspice
8 dried apple rings, halved
8 prunes, halved
8 dried apricots, halved
Chopped parsley, to garnish
Directions
Spray the crockpot bowl with oil and turn to LOW.
Heat 1 tbsp of oil in a large frypan and brown the sausages on all sides then place in crockpot.
Add remaining oil to frypan then sauté onion and garlic until soft then add ginger and chilli. Cook for 2-3 minutes longer then add the remaining ingredients, including chicken stock and SIDS SALT & PEPPER.
Boil the sauce then pour it over the sausages. Cover and cook for 2½-3 hours, stirring often.
Serve over creamy mashed potatoes and garnish with chopped parsley.
