Ingredients

2 cups cubed watermelon
2 cups cubed cantaloupe
1 cups cherry tomatoes, halved
2 cups cucumber, cubed
¼ cup lime juice
pinch sugar
¼ tsp SIDS SMOKEY BBQ RUB
2 tbsp fish sauce
2 tbsp peanut oil
¼ cup toasted peanuts, coarse chopped
¼ cup chopped herbs

Directions

In a large bowl, watermelon, cantaloupe, cherry tomatoes and cucumber and toss gently to combine. In a small bowl, combine lime juice, SIDS SMOKEY BBQ RUB, sugar, fish sauce and peanut oil and whisk to emulsify. Drizzle over vegetables and fruit and toss again gently. Place in a serving bowl and top with chopped herbs and toasted peanuts.
