Ingredients

350 g surimi
½ cup chopped celery
1 tbsp spring onions, chopped
⅓ cup SIDS RASPBERRY HONEY MAYO
2 tsp sweet mustard
1 tsp SIDS CRAZY LEMON
3 cheese muffins, split
1 cup cheddar, grated

Directions

Preheat oven grill.
In a food processor, blend surimi, celery, spring onion, SIDS RASPBERRY HONEY MAYO, sweet mustard and SIDS CRAZY LEMON then set aside.
Toast muffin halves then place ⅓ cup of mixture on the cut side of the muffin. Top with grated cheese and toast under a grill until the cheese melts.
