Sweet Pepper Relyeno

The pork tastes really good, but having it with sweet peppers makes it even better.

Ingredients

10 orange bell peppers
500 g ground pork
½ cup plain breadcrumbs
3 eggs
¾ cup breadcrumbs
1 onion, minced
½ cup minced carrot
1 tsp garlic powder
SIDS SALT & PEPPER to taste
¼ cup rice bran oil
SIDS PLUM SAUCE to serve

Directions

Cut peppers in half lengthways and scrape out seeds & membrain.
Combine the ground pork, 1 egg, minced onion, carrot, SIDS SALT & PEPPER and garlic powder in a bowl then mix well.
Scoop around 1½ tablespoons (or more) of the mixture and arrange it over the sweet pepper. Gently press the mixture to keep it intact. Meanwhile, heat the cooking oil in a pan.
While the oil is heating, beat the remaining 2 eggs. Dip the pepper and ground pork in the egg and roll it over the Panko bread crumbs. Make sure that the top is fully coated with the bread crumbs.
Pan fry until the breadcrumbs turn light to medium brown. Turn it over and cook the other side for 2 minutes. Remove from the pan.
Preheat the oven to 175oC.
Arrange in a baking tray lined with Aluminum foil. Bake the pan fried sweet peppers for 25 minutes then remove from the oven. Pour SIDS PLUM SAUCE into a ramekin to serve. Arrange on a plate lined with paper towels.
