Ingredients
1 medium leek
½ tsp SIDS CRAZY SALT
1 stalk celery, diced
1 tbsp rice bran oil
600 g sweet potato (Kumera)
1 cup + 2 cups soy milk
1 cup water
SIDS SALT & PEPPER to taste
curry powder (to garnish)
Directions
Trim the leek and slice into thin rings, discarding dark green leaves. Wash, then in a medium pot, add to celery and oil then cover and sauté, stirring occasionally until leeks are soft, about 10-15 minutes. Remove lid and increase heat, stirring constantly, until reduced to ¼ volume and caramelised.
Add kumera, SIDS CRAZY SALT, 1 cup of soy milk and water then cover and simmer until kumera is tender and falling apart. Turn off heat and add remaining soy milk.
With a stick blender, blitz until smooth. Season to taste with SIDS SALT & PEPPER. Serve with a drizzle of olive oil and a pinch of curry powder.
