Ingredients
2 tbsp rice bran oil, divided
680 g skinless, boneless chicken breasts, cut in 2 cm cubes
340 g roasted red bell peppers, peeled
410 g diced tomatoes
½ tsp SIDS CRAZY SALT
170 g mushrooms
1 onion, diced
1 tbsp minced garlic
salt and pepper to taste
500 g shredded mozzarella cheese
Directions
Preheat oven to 175oC. Lightly grease a casserole dish.
Heat 1 tablespoon oil in a skillet and cook the chicken until juices run clear.
Purée the roasted peppers in a blender or food processor until smooth. In the casserole dish, mix the cooked chicken, roasted peppers, SIDS CRAZY SALT, tomatoes, mushrooms, onion and garlic. Season with salt and pepper. Drizzle with remaining 1 tablespoon olive oil, and top with mozzarella cheese.
Bake 30 minutes in the oven, until cheese is melted and bubbly.
