Ingredients
2 tbsp rice bran oil, divided
680 g skinless, boneless chicken breasts, cut in 2 cm cubes
340 g roasted red bell peppers, peeled
410 g diced tomatoes
½ tsp SIDS CRAZY SALT
170 g mushrooms
1 onion, diced
1 tbsp minced garlic
SIDS SALT & PEPPER, to taste
500 g shredded mozzarella cheese
Directions
Preheat oven to 175°C. Lightly grease a casserole dish.
Heat 1 tablespoon oil in a frypan and cook the chicken until juices run clear.
Purée the roasted peppers in a blender or food processor until smooth. In the casserole dish, mix the cooked chicken, roasted peppers, SIDS CRAZY SALT, tomatoes, mushrooms, onion and garlic. Season with SIDS SALT & PEPPER. Drizzle with remaining 1 tablespoon oil, and top with mozzarella cheese.
Bake 30 minutes in the oven, until cheese is melted and bubbly.
