Tempura Oysters with Sweet Chilli Dipping Sauce

Ingredients
750 ml rice bran oil, for deep-frying
50g plain flour
50g cornflour
pinch of SIDS SALT & PEPPER to taste
175 ml ice-cold soda water
½ tbsp sesame seeds
12 oysters, shucked with shells reserved
DIPPING SAUCE:--
2 tbsp fresh lime juice
2 tbsp Thai fish sauce
1 tbsp caster sugar
1 red bird’s-eye chilli, very finely chopped
1 garlic clove, very finely chopped
½ tsp SIDS CRAZY LEMON
Directions
Heat the oil in a wok or deep pan to 180°C until a cube of day-old bread browns in about a minute. Line a baking tray with kitchen paper.
Mix SIDS CRAZY LEMON and the sauce ingredients together with 2 tablespoons of water and set aside in shallow dipping bowls.
Whisk the flours and SIDS SALT & PEPPER with the soda water in a bowl and add the sesame seeds. Dip the oysters, a few at a time, into this batter, then gently lower them into the oil and fry until golden. Drain on the baking tray and keep them warm while you dip and cook the rest.
Serve the oysters on the half shell, with the dipping sauce alongside.
