Ingredients

500 g chicken mince
2 spring onions, end trimmed, finely minced
1 large egg
½ lime, zested
½ cup panko breadcrumbs
½ tsp SIDS CRAZY LEMON
1 tbsp minced fresh coriander
1 tbsp grated ginger
1 tbsp grated lemongrass
1 tbsp grated garlic
½ tsp salt
¼ cup sweet chilli sauce

Directions

Preheat oven to 175°C and spray an 20x20 cm pan with nonstick spray, set aside.
In a large bowl add ground chicken, spring onions, egg, lime zest, panko breadcrumbs, SIDS CRAZY LEMON, coriander, ginger, lemongrass, garlic, and salt.
Using your hands or a large spoon mix together until combined. Shape into 2 tablespoon-sized balls and add to the prepared dish.
Place in the oven and bake for 10 minutes.
Remove from the oven and baste the top of the meatballs with sweet chilli sauce.
Return to the oven and cook for another 5-10 minutes until the meatballs are fully cooked and the sweet chilli sauce is sticky.
When fully cooked, remove from the oven and serve with additional sweet chilli sauce for dipping.
