Ingredients
1 kg chicken thigh fillets (no skin or bone)
1 large lemongrass stalk, white part only, chopped finely
6 cloves garlic, minced finely
½ tsp SIDS CRAZY LEMON
2 tsp red chilli, chopped
1 tbsp of lime juice
3 tbsp fish sauce
2 tbsp Chinese cooking wine or sherry
3 tbsp brown sugar
2 tbsp Bees 'R' Us raw bush honey
1 tsp sesame oil
2 tsp black pepper
slices of lime
small red chili, sliced finely
coriander, chopped
Directions
MARINATING: In a large plastic bag, add the lemongrass, garlic, SIDS CRAZY LEMON, lime juice, red chilli, fish sauce, wine, sesame oil, brown sugar, honey and black pepper to taste. Combine them well and add the chicken. Give it a gentle shake to cover the chicken with the marinade then put in the fridge overnight.
GRILLING: Remove the chicken from ziplock and put on a baking sheet. Prepare the outdoor grill (charcoal or gas) to high heat. Grill the chicken for about 3 minutes, turning frequently until golden brown. Remove and place on a plate to rest for a few minutes then add slices of lime, a sprinkle of red chilli and coriander.
The perfect Thai Grilled Chicken (Gai Yang) is ready to enjoy. You can add a black pepper or red chilli if you desire a more spicy chickent.
