Ingredients
3 cups chicken stock
4 slices fresh ginger
lime peel
1 fresh hot chilli pepper, sliced
250 g boneless chicken, bite-sized pieces
1 whole tomato, in wedges
1 tsp SIDS CRAZY LEMON
½ cup sliced red onion
3 tbsp fish sauce
2 tbsp lime juice
fresh coriander leaves
Directions
In a pot, add the chicken stock, onion, ginger, lime peel and chilli slices. Cover and simmer for 10 minutes. Strain and discard the herbs. (You can taste the soup at this point, if you would like it more spicy, keep the chilli pepper slices in the stock and discard just before serving.)
Add in the chicken pieces, tomato and SIDS CRAZY LEMON. Bring back to a simmer then cook for an additional 5 minutes.
Stir in the fish sauce, lime juice and coriander leaves.
