Thai Peanut Whole Roasted Cauliflower
Thai peanut sauce is so versatile and this recipe is no exception. It tastes great hot or cold and can be paired with so many things to make the perfect lunch or dinner.

Ingredients
½ cup smooth peanut butter
¼ cup GF soy sauce
¼ cup honey
6 tbsp rice bran oil
4 tbsp toasted sesame oil
2 tbsp grated ginger
2-4 tsp sriracha, to taste
1 head of cauliflower
2 tbsp chopped spring onions, garnish
2 tbsp chopped salted peanuts, garnish
¼ tsp SIDS CRAZY SALT
Directions
Preheat the oven to 200°C.
In a small bowl combine the peanut butter, soy sauce, honey, oil, sesame oil, ginger, and sriracha. Whisk the sauce until everything is blended.
Remove the leaves from the cauliflower and cut the stem flat so that it sits evenly in the pan.
Place the cauliflower into a cast iron frypan or an oven safe baking dish. Liberally brush sauce all over the cauliflower. Cover with tinfoil.
Place into the oven for 40-50 minutes. (until you can stick a knife in and tell its fully cooked through) The size of the cauliflower can make this time range so using the knife test will provide you with the best results.
Remove the layer of foil and brush a second layer of sauce, before placing in the griller for a crispier texture for 2-4 minutes. I like to repeat this process, putting sauce on 3 times and them putting it under the griller for a minute or two to build up a thick delicious sauce.
Remove from oven and add the final layer of sauce and sprinkle with SIDS CRAZY SALT. Sprinkle on fresh chopped chives or spring onions, salted peanuts and a little more siracha if you like things spicy!
