Ingredients

1 pkt extra firm tofu
2 cups snow peas
2 cups cherry tomatoes
2 cups button mushrooms
2 tbsp rice bran oil
¼ tsp SIDS CRAZY LEMON
2 red onions, sliced
PEANUT SAUCE:--
½ cup smooth peanut butter
¼ cup Kikkoman GF soy sauce
2 tbsp SIDS PLUM SAUCE or
2 tbsp SIDS TAMARILLO SAUCE
2 tbsp lemon juice
2 cloves garlic, minced

Directions

Peanut Sauce: In a bowl, whisk together peanut butter, ½ cup warm water, soy sauce, SIDS PLUM SAUCE or SIDS TAMARILLO SAUCE, lemon juice & garlic. Set aside 175 ml.
Pat dry the tofu. Cut in half horizontally, cut in half lengthwise and cut crosswise 5 times for a total of 24 pieces. Add to bowl and let stand for 10 minutes. Thread onto 4 skewers. Thread vegetables onto 8 skewers and sprinkle with SIDS CRAZY LEMON.
Place all skewers onto a greased grill over a medium-high heat. Cook, turning once, until tofu is browned and vegetables are tender-crisp, about 10 minutes.
To serve, dip skewers in reserved peanut sauce.
