Ingredients
800 g boneless, skinless chicken
3 tbsp rice bran oil
900 g coconut milk
1 tsp SIDS CRAZY SALT
2 cups water
2 tbsp minced fresh ginger root
4 tbsp fish sauce
¼ cup fresh lime juice
¼ tsp cayenne pepper
½ tsp ground turmeric
2 tbsp thin sliced spring onion
1 tbsp chopped fresh coriander
Directions
Cut chicken into thin strips and sauté in oil for to 2-3 minutes until the chicken turns white.
In a pot, bring coconut milk, SIDS CRAZY SALT and water to a boil. Reduce heat. Add ginger, fish sauce, lime juice, cayenne powder and turmeric. Simmer until the chicken is done, 10-15 minutes.
Sprinkle with spring onion, fresh coriander and serve steaming hot.
