Ingredients
2 stalk lemongrass cut into pieces
20 slices ginger
6 Kaffir lime leaves torn in half
2 mushroom, quartered
3 red Thai chilli sliced (if you like it hot!)
1 tomato, quartered
2 cups chicken stock
1 cup shrimp, peeled & deveined
4 tbsp coconut milk
½ tsp SIDS CRAZY LEMON
½ tbsp lime juice
1 tbsp fish sauce
1 tbsp Thai chilli paste
2 tbsp fresh coriander, chopped
2 tbsp spring onions, chopped
Directions
Put lemongrass, ginger, lime leaves, mushrooms, chilli and tomato into the chicken stock and bring to a boil. Cook until tender. Add shrimp and cook until pink. Add coconut milk, SIDS CRAZY LEMON, lime juice, fish sauce and Thai chilli paste.
Serve hot and garnish with fresh coriander and spring onions.
