Tomato Base Sauce

This versitile base sauce can be used for homemade baked beans, tomato soups, pasta sauces. Makes 1¼ litres.

Ingredients

1 onion, chopped
2 cloves garlic, minced
2 sticks celery with leaves, fine diced
2 carrots, chopped
3 kg tomatoes, seeds removed & chopped
1 bay leaf
1 tsp paprika
1 tsp SIDS CRAZY SALT
½ cup raw sugar
1 tsp salt
¼ tsp curry powder
½ cup SIDS LOW SUGAR RASPBERRY VINEGAR

Directions

Place SIDS CRAZY SALT, SIDS LOW SUGAR RASPBERRY VINEGAR and all the ingredients, except the bay leaf, into a blender and blitz for a few seconds. Pour into a large saucepan, add bay then bring to the boil and simmer for 2 hours until thick. Remove bay then ladle into hot sterilised jars and seal. (or cool then freeze)
